GRAPE VARIETY: 100% CHARDONNAY
PLANTATION: These vineyards are usually around 35 years old. The stony soils are calcareous-clay and belong to the Jurassic age. The Kimmeridgian soils are the most frequent in the area.
5500 grafts planted per hectare of vineyard with an expected return of 60 hectoliters.
CULTURE: The techniques behind the preparation of the soil and our sustainable practices to care for the vines are carefully chosen in agreement with agronomic technicians.
WINEMAKING AND MATURING PROCESS: Pneumatic pressuring, cold static clarification, alcoholic fermentation with temperature control, maturation on fine lees in stainless steel vats.
DESCRIPTION: A delicate dry wine with green reflections. The Chablis 1er Cru expresses notes of flowers and fruits in its early years. This wine is delicate but gets richer in the month after 5 years.
TASTING / FOOD AND WINE PAIRING: Scallops, Fish in a light sauce, white meat.
