Selection of an parcel located in a former quarry, coarse sand.
Vineyard from 35 to 40 years.
 
Average yields : 32 hl/ha.
Harvest by hand.
Grapes are destemmed.
 
Wine-making process : 23 day-fermentation in vats with one brewing a day, regular « pigeage » (to insert the grape pond in the juice).
Maturing in barrels (barrels one wine) during 18 to 20 months.
 
Tasting : Black fruit, black olive aromas, roasted supple finish. Smooth, smart and well blended and balanced.
 
Optimum preservation : from 4 to 10 years
